Moroccan Lentils
Ingredients
- Onion 1 head
- Garlic 3 cloves
- Tomato 1 piece
- Olive Oil 3 tablespoons
- Tomato Paste 1 tablespoon
- Ground Cumin ½ teaspoon
- Turmeric ½ teaspoon
- Lentils 10 oz
- Chopped Parsley 3 tablespoons
- Salt to taste
Step-by-Step Guide
Step 1
Finely chop the onion, and press the garlic. Cut the large tomato in half, remove the seeds, and dice the flesh into small cubes.
Step 2
Heat the olive oil in a pan and sauté the onion, then add the tomato paste, cumin, and turmeric.
Step 3
Add the lentils to the pan, along with the garlic and tomato cubes. Pour in enough water to cover the contents of the pan, and cook on low heat for 30 minutes until the sauce thickens. The lentils should be soft but hold their shape. If the water evaporates quickly, add more as needed. Season with salt at the end of cooking.
Step 4
Serve with chopped parsley.
