- Rabbit 8 pieces
- Clarified Butter 1 tablespoon
- Turnips 4 pieces
- Dry White Wine 5 fl oz
- Toasted Cumin Seeds 1 teaspoon
- Minced garlic 4 cloves
- Salt to taste
- Chicken Broth 5 oz
Step-by-Step Guide
Step 1
Dry the pieces, sauté in fat, and transfer to a pot.
Step 2
Pour 80 grams of water or broth with wine into the pot, add salt, and simmer on low heat until tender (about 40–50 minutes) depending on the age and 'sportiness' of the meat.
Step 3
Next, add grated carrots and cumin (generously), and simmer for 15 minutes.
Step 4
Add the minced garlic, cover for another 5 minutes, and remove from heat.
