Mock Fish, or Gefilte Chicken
Ingredients
- Duck wings 30 oz
- Onion 2 heads
- Thyme 4 stalks
- Bay leaf 2 pieces
- Carrot 2 pieces
- Potato 2 pieces
- Salt 2 spoons
- Coarse matzo 2 spoons
- Ground meat 20 oz
- Ground Black Pepper ½ spoons
- Egg white 1 piece
- Gelatin 0 oz
- Parsley to taste
- Horseradish Leaves to taste
Step-by-Step Guide
Step 1
Cut one onion in half and mix it in a deep skillet with chicken wings, thyme, bay leaf, diced potatoes, and carrots. Pour in water. Season with salt and pepper to taste, bring to a boil, and skim off any foam. Reduce the heat to low and let it simmer.
Step 2
Meanwhile, grate the second onion on a coarse grater and mix it with the ground chicken, crushed matzo (which can be ground in a blender), salt, black pepper, and egg white. With damp hands, shape the mixture into oval patties and carefully drop them into the boiling broth. Cook, gently stirring, until the vegetables are soft and the chicken meatballs are cooked through (about fifteen minutes).
Step 3
Using a slotted spoon, transfer the vegetables and meatballs to a large plate and cover with plastic wrap, then place in the refrigerator. Meanwhile, bring the broth back to a boil, then strain it through a sieve (you should have about 800 ml). Stir gelatin into the broth, season with salt, place in the refrigerator, and allow it to thicken (for a couple of hours).
Step 4
Serve the meatballs with chilled vegetables alongside a jelly sauce, chopped parsley, and horseradish.
