Ingredients
- Beef 20 oz
- Chicken Broth 1 tablespoon
- Green peppercorns 10 pieces
- Garlic ½ head
- Ground Caraway ½ teaspoon
- Activated Baking Soda a pinch
Step-by-Step Guide
Step 1
Pass the meat without membranes through a meat grinder.
Step 2
Add salt, pepper, half of the grated garlic, broth, baking soda to the minced meat, knead, and refrigerate for 4 hours.
Step 3
Then pass through a meat grinder with a tube of 1–2 cm in diameter, from which the mixture will come out in the shape of sausages. Cut this mixture into sausages 10–12 cm long (if a tube is not available, shape into sausages by hand, moistened with cold water) and grill them over high heat.
Step 4
While grilling, brush the mititei with a brush soaked in salty meat broth and sunflower oil.
Step 5
Mititei are served with fresh tomatoes, cucumbers, and onions, sprinkled with grated garlic and parsley and celery greens.
