Ingredients
- Dressed Milk Piglet 4½ kg
- Mixed salad greens 10 oz
- Vegetable Oil 5 fl oz
- Eggplants 10 oz
- Sweet Pepper 10 oz
- Mixed tomatoes of different colors 10 oz
- Suluguni Cheese 5 oz
- Imeretian cheese 5 oz
- Spinach 0 oz
- Dry adjika 5 oz
- Lemon 5 oz
Step-by-Step Guide
Step 1
Rinse the piglet, clean it, rub the inside with lemon, salt, and adjika, and let it marinate for 6 hours.
Step 2
Then, brush the skin with vegetable oil (wrap the ears and tail in foil) and place it in the oven at 355°F for 30 minutes. After that, increase the temperature to 430°F and roast for another hour.
Step 3
Cut the eggplants, bell peppers, and tomatoes in half lengthwise and remove the seeds. Place grated cheese on the eggplants – a mixture of 50 grams of sulguni and 50 grams of imeretian cheese.
Step 4
Place grated cheeses (25 grams each of sulguni and imereti) and chopped spinach on the tomatoes and peppers.
Step 5
Place the vegetables in the oven to roast at 430°F for 10 to 12 minutes.
Step 6
Place the cooked piglet on a platter, arranging vegetables and lettuce leaves alongside it.
