  • Fresh basil leaves 5 oz
  • Salad Potatoes 15 oz
  • Lime 2 pieces
  • Celery salt 0 oz
  • Thyme 0 oz
  • Parsley 0 oz
  • Rosemary 0 oz
  • Garlic 2 cloves
  • Butter 0 oz
  • Pistachios 0 oz
  • Olive Oil 5 fl oz
  • Ocean salt 0 oz
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Make two small cuts on each side of the fish, drizzle with lime juice and olive oil on both sides, season with salt and pepper.

Step 2

Finely chop 1 clove of garlic and rosemary and add them to 40 ml of olive oil — the garlic oil is ready.

Step 3

Gather the thyme, celery, and parsley into a bouquet and gently crush it.

Step 4

Pour the garlic oil inside the fish, add sea salt, ground pepper, and the bouquet of herbs; stuff the squeezed lime halves into the gills.

Step 5

Cut the potatoes into large wedges, drizzle with olive oil, and bake in the oven at 355°F for 9 minutes; then add the fish and bake for another 15 minutes.

Step 6

Heat a skillet, sauté the remaining clove of garlic, diced, and pine nuts in butter for 1 minute, add the spinach and sauté for another minute, season with salt, and remove from heat.

Step 7

Place the cooked fish in the center of the plate, arrange the baked potatoes beside it, drizzle the fish and potatoes with garlic-rosemary oil; add the spinach, garnish the dish with a lime half, and serve.
