Mexican-Style Pork Ribs
Ingredients
- Pork Skewers 5 lbs
- Dried Rosemary 1½ spoons
- Dried Chili Pepper 16 pieces
- Ground Cinnamon 2 spoons
- Ground clove ¼ spoons
- Champagne Vinegar 5 fl oz
- Orange juice concentrate 5 fl oz
- Vegetable Oil 0 fl oz
- Garlic 16 cloves
- Parsley 6 stalks
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Place the prepared pork ribs in a deep baking dish or a large bowl. In a pot, cover the deseeded and stemmed chili peppers with four cups of hot water and let them soak for eight to ten minutes. Then, drain them in a colander and pat them dry, while reserving about half a cup of the soaking water.
Step 2
In the bowl of a food processor, combine the softened chiles with oregano, cinnamon, cloves, vinegar, orange juice, vegetable oil, lightly crushed garlic, parsley, salt, and pepper to taste. Then add the water in which the chiles were soaked. Blend until smooth and pour the resulting marinade over the ribs. Cover the container with plastic wrap (or tightly with a lid) and refrigerate overnight or for at least four hours.
Step 3
Preheat the grill. Remove the ribs from the marinade and grill them for thirty to thirty-five minutes, turning occasionally, until a rich dark crust forms on both sides.
Step 4
Remove the cooked pork ribs from the grill and let them rest for fifteen to twenty minutes to cool slightly before serving.
