Description

Mexican Stew

Ingredients

  • Beef 10 oz
  • Onion 1 head
  • Sweet Pepper 2 pieces
  • Tomatoes 10 oz
  • Garlic 2 cloves
  • Passata Tomato Sauce 15 oz
  • Ground Black Pepper to taste
  • Salt to taste
  • Mild Chili Spice 1 piece
  • Vegetable Oil to taste
  • Canned Baby Beets 1 can

Step-by-Step Guide

Step 1

Chop the onion to your preference (finely, coarsely, or into half rings), and mince the garlic. Wash the peppers and remove the seeds. Cut the sweet pepper into cubes and the chili into small pieces. Blanch the tomatoes in boiling water for 5-7 minutes, then peel off the skin. Cut into large pieces.

Step 2

In a pot, heat a little vegetable oil. Sauté the onion and garlic together. Once the onion becomes translucent, add sweet and hot peppers. Pour in half a cup of hot water and simmer for 8-10 minutes.

Step 3

While it simmers, heat oil in a skillet and sauté the minced meat, breaking up any lumps with a wooden spatula, for about 7 minutes. Season with salt and pepper to taste, and stir.

Step 4

In a pot with vegetables, add the beans, tomatoes, and tomato paste, and simmer for just 4 minutes. Then, add the sautéed minced meat and pour in about 500 ml of hot water (add the water to your preference — the vegetables should be simmering in it, but it should evaporate). Simmer for 10 minutes over a low boil.

Step 5

For extra heat, add either a few chili peppers, Tabasco sauce, or ground red pepper.
