Mexican Shrimp Cocktail
Ingredients
- Peeled Cooked Shrimp 20 oz
- Salt 2 tablespoons
- Activated Baking Soda a pinch
- Lime Juice 6 tablespoons
- Spanish onions 10 oz
- Passata Tomato Sauce 7½ tablespoons
- Ketchup 1½ cups
- Cilantro 3 tablespoons
- Orange juice concentrate 2 tablespoons
- Mild Chili Spice 1 piece
- Raisins to taste
- Avocado 1 piece
- Fajitas sauce 1 teaspoon
Step-by-Step Guide
Step 1
In a large bowl, salt the shrimp with 1 teaspoon of salt and sprinkle with baking soda. Leave in the refrigerator for 15 minutes.
Step 2
In a medium bowl, mix 4 tablespoons of lime juice, onion, tomato paste, ketchup, cilantro, orange juice, and chili pepper.
Step 3
In a pot, combine 2.3 liters of water, the remaining (2 tablespoons) lime juice, and 2 tablespoons of salt. Add the shrimp and cook on medium heat, stirring occasionally. When the shrimp are cooked, reduce the heat to 76.67°C.
Step 4
Drain the water from the shrimp and rinse under cold running water. Cut the shrimp into 1.5 cm pieces. Place the shrimp in the bowl with the sauce and mix to coat them. Top with avocado and serve immediately, garnished with raisins, along with hot sauce.
