Mexican Rice with Onions

Ingredients

  • Olive Oil 1 tablespoon
  • Brown Rice 1 cup
  • Frozen Corn 1 cup
  • Peas 1 cup
  • Chopped Green Onions 8 stalks
  • Minced garlic 3 cloves
  • Ground Cumin 1 teaspoon
  • Dried Oregano ½ teaspoon
  • Tomato Paste 2 tablespoons

Step-by-Step Guide

Step 1

Heat the oil in a skillet over medium heat.

Step 2

Add the rice and sauté for 3-4 minutes until golden brown. Add the corn, peas, green onions, garlic, and oregano, and sauté for 1 minute.

Step 3

Place the tomato paste in a 400 ml measuring cup. Fill the measuring cup with boiling water, stir. Pour the mixture over the rice and vegetables, add salt and pepper.

Step 4

Reduce the heat to low, cover with a lid, and let simmer for 15 minutes until the liquid evaporates. Remove from heat and fluff with a fork before serving.
