Mexican Chicken

Ingredients

  • Olive Oil 2 tablespoons
  • Chicken bones 8 pieces
  • Onion 1 head
  • Mild Chili Spice 1 teaspoon
  • Ground coriander 1 teaspoon
  • Baking Tomatoes 15 fl oz
  • Passata Tomato Sauce 2 tablespoons
  • Salt to taste
  • Sweet Corn Sticks 5 oz
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Heat the oil in a skillet, add the chicken legs and fry until browned on all sides. Remove from the skillet and set aside.

Step 2

Add the onion and sauté for 3–4 minutes until softened. Then add the chili powder and coriander, cooking for a few seconds.

Step 3

Add the chopped tomatoes with their juice and the tomato paste.

Step 4

Return the chicken to the skillet and cook for 20 minutes until the chicken is cooked through. Add the corn and cook for 3–4 minutes. Season to taste. Serve with rice and salad.
