Ingredients

  • Pike Perch Fillet 1 piece
  • Garlic 1 clove
  • Butter 5 oz
  • Parsley 0 oz
  • Apple Wine 0 fl oz
  • Capers 0 oz
  • Olives stuffed with lemon 0 oz
  • Shallot 1 piece
  • Marinated cherries 0 oz
  • Vegetable Oil to taste
  • Ground Black Pepper to taste
  • Thyme to taste

Step-by-Step Guide

Step 1

Clean the pikeperch fillet of bones, leaving the skin on.

Step 2

Heat vegetable oil in a skillet.

Step 3

Place the fillet skin-side down, season with salt and pepper, and add thyme.

Step 4

Fry the fillet in the skillet under a weight until cooked through.

Step 5

Finely chop the shallot, garlic, capers, and olives.

Step 6

In another skillet, sauté the shallot, garlic, capers, and olives in vegetable oil for 5 minutes.

Step 7

Pour in the white wine, reduce the heat, and simmer until the wine evaporates.

Step 8

Add the butter, cherry tomatoes, and chopped parsley to the sauce.

Step 9

Place the pikeperch in the sauce skin-side up and simmer for 2 minutes until an oily emulsion forms.

Step 10

Serve on a plate, garnish (for example, with mussels or capers), and enjoy.
