Mediterranean Fish Goulash
Ingredients
- Dry White Wine 5 fl oz
- Cod 25 oz
- Olive Oil 2 tablespoons
- Onion 2 heads
- Orange Bell Peppers 1 piece
- Garlic 2 cloves
- Fennel 1 head
- Olives stuffed with lemon 5 oz
- Crushed Tomatoes in Their Own Juice 30 oz
Step-by-Step Guide
Step 1
In a large pot or skillet, pour in the olive oil and heat it up. Add finely chopped onion, garlic, fennel, and bell pepper cut into thin strips. Cook over low heat, stirring continuously, for about 10 minutes.
Step 2
Add the tomatoes, tomato paste, white wine, and seasonings to taste. Bring to a boil, reduce the heat, and simmer for another 15 minutes without covering.
Step 3
Add the fish cut into small pieces to the pot and simmer until cooked, about 5 minutes.
Step 4
Add the olives to the stew and continue cooking for another 3 minutes.
