Mediterranean Chicken
Ingredients
- Poultry 1 piece
- Orange Bell Peppers 3 pieces
- Parsley 1 bunch
- Red Long Chili Peppers 1 tablespoon
- Dry White Wine 5 fl oz
- Olive Oil 5 tablespoons
- Lemon 2 pieces
- Ground Black Pepper to taste
- Salt to taste
- Garlic 3 cloves
Step-by-Step Guide
Step 1
Wash the bell peppers and roast them in a preheated oven at 430°F. Once the peppers are completely soft, remove them from the oven. Allow the peppers to cool completely, then peel off the skin and clean the insides.
Step 2
Peel and finely chop the garlic. Wash and finely chop the parsley. Wash the chicken, clean it, cut it into serving pieces, and place it in a bowl. Drizzle with lemon juice, add parsley and garlic, ground red and black pepper, and mix well. Leave in a dark place for 2 hours. Then drizzle with oil, season with salt, and mix again. Place the chicken on a baking sheet and bake in a preheated oven at 355°F for 1.5 hours, periodically removing it to baste with wine, stirring occasionally. 15 minutes before it is done, add the bell peppers, drizzle with oil, and return to the oven.
