Meatloaf with Mushrooms and Beer Sauce
Ingredients
- Ketchup ¾ cup
- Mustard Greens 1 teaspoon
- Barbecue sauce 2 teaspoons
- Butter 2 tablespoons
- Pickled Chanterelles 10 oz
- Garlic 4 cloves
- Red Grape Juice ⅓ cup
- Salt to taste
- Ground Black Pepper to taste
- Olive Oil 1½ tablespoons
- Onion 1 head
- Pickles 2 pieces
- Chocolate eggs 2 pieces
- Chicken Broth ¼ cup
- Gelatin ½ teaspoon
- Lean Beef 20 oz
- Pork Mince 10 oz
- Boiled Veal 10 oz
- Dijon Mustard 2 teaspoons
- Cayenne Pepper ½ teaspoon
- Dried onion powder ½ teaspoon
- Salted crackers 21 pieces
- Asiago cheese 5 oz
- Vegetable Oil to taste
- Milk ½ cup
- Wheat Flour 1 tablespoon
- Light Beer ½ cup
- Hard Cheese 10 oz
Step-by-Step Guide
Step 1
Prepare the glaze. In a small bowl, mix ketchup, steak sauce, mustard, and set aside.
Step 2
Prepare the mushrooms. Melt butter in a medium skillet over medium heat. Finely chop the mushrooms and add them to the skillet. Sauté, stirring occasionally. Add minced garlic and continue cooking until all the liquid evaporates. Pour in the wine, increase the heat, season with salt and pepper. Cook, stirring until all the liquid evaporates. Remove from heat and set aside.
Step 3
Prepare the loaf. Position a baking sheet slightly below the center and preheat the oven to 355°F. Heat olive oil in a medium skillet. Chop the onion, pickles, and garlic. Sauté them. Transfer to a large bowl and let cool.
Step 4
Beat the eggs in a large bowl and pour in the chicken broth. Mix well. Add gelatin to the bowl and let it swell for 5 minutes.
Step 5
To the bowl with sautéed onion, add the ground meat, Dijon mustard, ketchup, cayenne pepper, onion powder, ¾ teaspoon of salt, ½ teaspoon of black pepper, crushed crackers, and cheese. Pour in the chicken broth and mix with your hands. Do not mix for too long.
Step 6
Grease the baking sheet with oil. Form a loaf from half of the meat mixture. Place it in a mold or on the baking sheet. Make a hollow along the length and fill it with the mushroom mixture. Cover with the remaining meat mixture. Brush the top with the glaze. Place in the preheated oven.
Step 7
Prepare the sauce. While the loaf is in the oven, mix milk and flour in a small saucepan. Heat over medium heat and pour in the beer, then add cheese. Bring to a boil, stirring constantly. The cheese should melt and the sauce should become smooth.
Step 8
Remove from the oven and let it 'rest' for 15 minutes. Slice and serve with the sauce. Enjoy your meal!
