Ingredients

  • Spanish onions 1 head
  • Lean Beef 25 oz
  • White bread 2 slices
  • Mild Chili Spice ½ piece
  • Herbs 1 bunch
  • Crushed Tomatoes in Their Own Juice 1 cup
  • Chicken Egg 1 piece
  • Milk 5 fl oz
  • Paprika 1 teaspoon
  • Garlic 2 cloves
  • Salt 1¼ teaspoons
  • Ketchup ½ cup
  • Worcestershire Sauce 1 teaspoon
  • Ground clove 1 teaspoon
  • Honey-Mustard Dressing 1 teaspoon
  • Ground Cumin a pinch
  • Wheat Flour 3 tablespoons

Step-by-Step Guide

Step 1

Preheat the oven to 355°F.

Step 2

Dice the onion, chop the herbs (fresh parsley, dill). Finely chop half of the fresh green chili pepper (you can substitute it with green bell pepper), removing the seeds and veins. Lightly beat the egg in a deep bowl with a fork. Tear a couple of slices of bread and soak them in milk in a bowl.

Step 3

Add the beaten egg, chopped herbs, minced chili pepper, spices (paprika, salt, pepper), and crushed tomatoes to the bowl with the bread, and mix everything together. Add the fresh ground beef to the bowl and squeeze in a couple of cloves of garlic. Now mix everything well.

Step 4

Grease a rectangular loaf pan with vegetable oil. Place the mixture into the pan. Cover the pan with foil and put it in the oven for 45 minutes.

Step 5

Meanwhile, prepare the glaze sauce: mix ketchup, ground cumin, Worcestershire sauce, and honey mustard.

Step 6

Remove the meatloaf from the oven and take off the foil. Drain the juice (broth) into a bowl. Brush the top of the loaf with the prepared sauce. Return the loaf to the oven and brown for 10 minutes.

Step 7

While the meatloaf is finishing in the oven, prepare the gravy: in a pan, toast the flour until it turns a flesh color. It is important to brown the flour but not burn it. The color of the gravy (this is how it is affectionately called in Siberia) depends on the color of the toasted flour. Gradually add the meat juice (broth) and water (1–1.5 cups). Season with salt and freshly ground pepper. Thicken the gravy by letting it simmer for a bit. If you enjoy wine, you can add white wine instead of water and cook over medium heat to let the alcohol evaporate.

Step 8

Remove the loaf from the oven, let it rest for 5–7 minutes, and then slice it into portions before serving. Traditionally, meatloaf is served with mashed potatoes and gravy.
