Meatballs with Gravy in a Slow Cooker
Ingredients
- Chicken Broth 2½ cups
- Chicken Egg 1 piece
- Gelatin ¼ teaspoon
- Lean Beef 10 oz
- Pork Mince 10 oz
- Breadcrumbs 5 oz
- Salt to taste
- Ground Black Pepper to taste
- Grated Pecorino Pepato Cheese 0 oz
- Paprika ¼ teaspoon
- Dried Chili Pepper ½ teaspoon
- Garlic 5 cloves
- Chopped Sage Leaves 2 tablespoons
- Olive Oil 5 tablespoons
- Veal Tenderloin 25 oz
- Sausages 20 oz
- Pork Skewers 10 oz
- Onion 1 head
- Celery salt 1 bunch
- Carrot 1 piece
- Passata Tomato Sauce 2½ cups
- Red Grape Juice ½ cup
- Bay leaf 3 pieces
- Thyme 4 stems
- Baking Tomatoes 20 oz
- Balsamic Vinegar ½ tablespoon
- Basil 0 oz
- Pasta (corkscrew) to taste
Step-by-Step Guide
Step 1
Prepare the meatballs. Beat the egg in a large bowl and pour in the chicken broth. Mix well. Add the gelatin to the bowl and let it swell for 5 minutes. Add the ground meat, Parmesan cheese, and breadcrumbs to the bowl. Season with salt and pepper. Mix by hand. Do not mix too long. Roll small meatballs and place them in the refrigerator.
Step 2
Prepare the sausages and ribs. In a medium bowl, combine the breadcrumbs and grated Parmesan cheese, paprika, dried pepper, garlic, chopped parsley, and 2 tablespoons of olive oil. Rub the tenderloin with the mixture. Roll the meat into a log and tie it with twine.
Step 3
In a pot, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausages and brown them on all sides. Transfer to the slow cooker. In the pot, pour in 1 tablespoon of olive oil. Brown the pork ribs and place them in the slow cooker. Do the same with the beef tenderloin.
Step 4
Prepare the sauce. Place the pot over medium heat. Add the chopped onion, celery, and carrot. Sauté until the carrot is soft and the onion is translucent. Add the crushed garlic and continue cooking until fragrant. Add the tomato paste and cook, stirring. Pour in the red wine, increase the heat, and bring to a boil. Add the chicken broth, bay leaves, thyme, tomatoes (blended or pureed), and balsamic vinegar. Season with salt and simmer on low heat.
Step 5
Pour the resulting sauce into the slow cooker. Heat and cook on low for about 7 hours.
Step 6
Then remove the sausages, meat, and ribs from the sauce, along with the bay leaves and thyme. Cover the meat with foil and set aside.
Step 7
Carefully place the meatballs into the slow cooker with the sauce. Set to high and cook the meatballs in the sauce for about 30 minutes. Season with salt to taste.
Step 8
Cook the pasta. Pour the gravy over it and mix. Top with the meat, garnish with basil leaves, and sprinkle with Parmesan cheese. Serve hot. Enjoy your meal!
