
Meatballs with Dried Apricots

Description
You can use beef, veal, or lamb for the filling. Using lamb yields a more delicate flavor, but some people consider lamb to be an adult food, which is a misconception.
Ingredients
- Onion 1 head
- Ground meat 20 oz
- Dried Apricots 0 oz
- Olive Oil 0 fl oz
- Chicken Egg 1 piece
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Finely chop the onion and dried apricots. You can use a food processor, but be careful not to overdo it — the result should be finely chopped, not pureed onion and apricots.
Step 2
Heat a little olive oil in a skillet over low heat and gently sauté the onion and dried apricots, stirring constantly. This should be done for about five to seven minutes. Be careful not to let the onion burn.
Step 3
Place the ground meat in a deep bowl, season with salt and pepper. Lightly beat the egg and mix it into the meat with your hands, then add the onion and dried apricots, and mix again.
Step 4
Moisten your hands and form small meatballs, about 3–4 cm in diameter. Grease a baking dish with oil, arrange the meatballs in it, and bake in an oven preheated to 355°F for fifteen minutes. For a side dish, you could serve them with buckwheat or mashed potatoes mixed with spinach.
