Description
You can also make meatballs from chicken or lean fish. Serve with mashed potatoes or carrot puree.

- Salt to taste

Step 1
Pass the lean meat and any membranes through a meat grinder twice along with a slice of crustless bread soaked in cold water.
Step 2
Pound the resulting mixture in a mortar with 1 teaspoon of butter, strain through a sieve, season with salt, and mix with well-beaten egg white.
Step 3
Then shape small elongated patties (without coating in breadcrumbs), place them in a frying pan, pour a small amount of cold broth over them, cover with oiled paper, and place in the oven for half an hour.
