Meat Stewed with Plums

Description
Plums can be replaced with dates, but in this case, do not add sugar.
Ingredients
- Meat 0 lbs
- Plums 20 oz
- Onion 1 piece
- Garlic 2 cloves
- Olive Oil 4 tablespoons
- Sugar 2 tablespoons
- Cinnamon 2 teaspoons
- Saffron ½ teaspoon
- Nutmeg ¼ teaspoon
- Grated Ginger Root ½ teaspoon
- Pistachios 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Finely chop the onion and sauté it in a heavy-bottomed pot with olive oil until golden brown. Add the minced garlic and diced meat, and fry, stirring constantly, until a golden crust forms. Add salt, saffron, ginger, and nutmeg to the meat. Pour in enough water to cover the meat, and stew covered for 1 to 1.5 hours.
Step 2
Cut the plums in half and remove the pits. Place them in the pot, adding sugar, cinnamon, and pepper. Stew covered for 15 minutes, then another 5 minutes uncovered to thicken the sauce.
Step 3
Transfer the meat to a serving dish and sprinkle with lightly toasted (without oil) pine nuts or chopped almonds.
