Meat Stewed with Dried Apricots
Ingredients
- Vegetable Oil 5 fl oz
- Onion 3 pieces
- Carrot 4 pieces
- Chicken Broth 1 cup
- Dried Apricots 5 oz
- Passata Tomato Sauce 1 tablespoon
- Wheat Flour 1 tablespoon
- Bay leaf 1 piece
- Nutmeg 1 teaspoon
- Salt to taste
- Ground Black Pepper to taste
- Pork tenderloin 0 lbs
Step-by-Step Guide
Step 1
Cut the meat into flat pieces about 1–1.5 cm thick and weighing 100–150 g. Tenderize the pieces.
Step 2
In a saucepan or deep skillet with a thick bottom, heat the oil and sauté the pieces of meat for 1–2 minutes on each side until browned. Season the meat with salt and transfer it to another dish.
Step 3
In the same saucepan where the meat was fried, sauté the chopped onion until golden, then layer the pieces of meat on top. Julienne the carrot or grate it on a coarse grater and place it over the meat.
Step 4
Pour boiling water or hot broth into the saucepan, add the tomato paste, and stew the meat covered for 1.5–2 hours. About 15–20 minutes before it's done, add the rinsed dried apricots and season to taste.
Step 5
Serve the meat along with the sauce on a platter immediately. A great side dish would be boiled fluffy rice.
