Description
A classic dish of Soviet cuisine — meatballs with rice, code-named 'Hedgehogs.' The long-grain rice serves as the 'spines.' This dish is great because it is very easy to prepare and contains approximately equal amounts of protein and carbohydrates. They can be served without a side dish, accompanied by the same sauce used for braising the 'Hedgehogs.'
Ingredients
- Pork Mince 20 oz
- Long-Grain Rice 5 oz
- Onion 2 heads
- Carrot 1 piece
- Chicken Egg 2 pieces
- Passata Tomato Sauce 0 oz
- Vegetable Oil 0 fl oz
- Water 10 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Chop one onion.
Step 2
Mix it with the minced meat.
Step 3
Add the rice, eggs, salt, and pepper to taste. Mix well.
Step 4
Chop the second onion and grate the carrot using a large grater.
Step 5
Heat vegetable oil in a deep skillet and sauté the onion until it becomes translucent.
Step 6
Add the carrot and sauté, stirring, for another couple of minutes.
Step 7
Add tomato paste to the vegetables.
Step 8
Pour in a cup of water, add a pinch of salt, and stir.
Step 9
Shape the minced meat into evenly sized balls, place them in the skillet, and cover with a lid.
Step 10
Cook for 30 to 40 minutes over low heat.
