Step-by-Step Guide
Step 1
Place 450 grams of ground beef, 30 grams of onion, 5 grams of garlic, 5 grams of mint, and 200 grams of cream in a blender and blend until smooth. Shape into croquettes and fry until golden brown in a skillet.
Step 2
Bring water to a boil, cook the peas in salted water for 3-5 minutes. Place in a blender, add 5 grams of fresh mint, and blend. Refrigerate until serving time.
Step 3
Sauté 30 grams of onion in butter, add thyme, bell pepper, and sauté until soft. Add 300 grams of cream, bring to a boil, reduce heat, and let thicken for 10 minutes. Blend and strain.
Step 4
Place the croquettes in a preheated oven at 390°F and bake for about 5 minutes.
Step 5
Reheat the pea purée, adding a small amount of butter, and adjust the flavor with salt and pepper. Spoon the purée into the center of a plate, drizzle with sauce, and top with croquettes. Garnish with a mint leaf and serve.
