! It is important to remember that for kosher matzah, the entire process from the moment the flour comes into contact with water until the rolled dough is placed on the skillet should not exceed 18 minutes! During this time, the dough is believed not to ferment.

  • Wheat Flour 20 oz
  • Water 10 fl oz
  • Chicken Eggs 4 pieces

Step-by-Step Guide

Step 1

Knead the dough until it reaches a crumbly state. The water for the dough should be ice-cold.

Step 2

Place on a board. Flatten the dough with a meat mallet (or another heavy object) until it becomes homogeneous.

Step 3

Divide the dough into four parts and roll out with a rolling pin to a thickness of 1.5–2 mm.

Step 4

Make holes all over the surface with a fork or a special roller with spikes.

Step 5

Bake on a clean (without oil) hot skillet over an open flame (not in the oven).

Step 6

Judge readiness by the yellowing of the matzah sheet and brown spots.
