
Mashed Potatoes with Tomato Concasse and Rosemary

Ingredients
- Salad Potatoes 0 lbs
- Tomatoes 20 oz
- Milk 5 fl oz
- Butter 5 oz
- Fresh Rose Hips 3 sprigs
- Garlic 2 cloves
- Dry White Wine 5 fl oz
- Dried Rosemary 0 oz
- Salt to taste
- Olive Oil to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Peel the potatoes. Cut them into small equal pieces. Place them in a pot. Cover with boiling water so that the water completely covers the potatoes. Add 2 sprigs of rosemary to the pot. Bring to a boil with the lid on, add salt. Pour in a little wine and olive oil. Cook covered until a knife easily goes through the potatoes (about 25 minutes).
Step 2
While the potatoes are cooking, let's make the tomato concasse. Take the tomatoes, place them in boiling water for 15 seconds, then immediately put them in ice-cold water. Cut each into 4 pieces, carefully peel off the skin, and remove the inner part, leaving what resembles a fillet. Dice everything finely.
Step 3
Heat a pan, add a little olive oil. Crush the two cloves of garlic into it and add a sprig of rosemary. Sauté on low heat for about a minute, then pour in the wine (about 50–100 grams). Let the wine evaporate for about a minute over medium heat, removing everything we can.
Step 4
Add the concasse. Season with salt and pepper, and sprinkle with a few pinches of rosemary.
Step 5
Sauté, stirring occasionally, for about 3–5 minutes.
Step 6
The potatoes are ready. Drain the water, return them to the heat, and dry them for a minute or two. Take a potato masher and mash everything well to avoid lumps. Take the warmed milk and pour in about half, mixing well, then add about half of the butter in cubes. Mix again. Add more milk or butter to taste until the desired consistency is reached. Step 7
Add the concasse to the mashed potatoes. Mix thoroughly, sprinkle with rosemary, and adjust to taste (salt, pepper, spices).
