Mashed Potatoes with Indian Spices
Ingredients
- Potatoes 0 lbs
- Canola Oil 10 fl oz
- Black Mustard Seeds 1 teaspoon
- Asafoetida 1 teaspoon
- Fenugreek 1 teaspoon
- Black Currant Leaves 20 pieces
- Garlic 4 cloves
- Chili Peppers 3 pieces
- Onion 1 head
- Peas 10 fl oz
- Ground coriander 1½ teaspoons
- Turmeric 1 teaspoon
- Ginger Root 1 piece
- Coarse Salt to taste
- Chopped Cilantro (Coriander) 0 oz
Step-by-Step Guide
Step 1
Boil the potatoes in boiling water until soft for 25-30 minutes; drain the water, peel, and cut into 5 cm pieces.
Step 2
Heat the oil in a large skillet over high heat. Fry the mustard seeds until they start to pop for 1-2 minutes. Add asafoetida, fenugreek, and black currant leaves; sauté for 1 minute. Add garlic, chili, and onion; sauté until golden brown for 8-10 minutes.
Step 3
Add the potatoes, peas, coriander, turmeric, ginger, salt, and 120 ml of water; bring to a boil. Reduce the heat to medium and simmer covered for 8-10 minutes until the potatoes are soft. Remove the lid, stir, slightly mashing the potatoes; simmer until some of the liquid evaporates for 4-5 minutes. Add cilantro.
