Mashed potatoes with cranberries
Ingredients
- Potato 20 oz
- Cranberry 10 oz
- Brown Sugar 5 oz
- Oranges 2 pieces
- Thyme 1 piece
- Butter 5 oz
- Allspice berries 2 pieces
- 33% Cream 5 fl oz
- Salt to taste
- Bay leaf 1 piece
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Peel the potatoes and cut them into large chunks.
Step 3
Boil the potatoes with bay leaves and allspice.
Step 4
Juice the oranges.
Step 5
In a saucepan, combine sugar, orange juice, and thyme. Place over heat and cook until the sugar is dissolved.
Step 6
Stir in two-thirds of the cranberries and simmer over low heat for about 5 minutes, allowing the sauce to thicken slightly while keeping the berries whole. Once the sauce is ready, remove the sprig of thyme.
Step 7
Mash the cooked potatoes into a puree, adding butter and cream, and season with salt.
Step 8
Gently fold in the remaining cranberries into the puree.
Step 9
Spoon the puree onto a plate and drizzle with cranberry sauce.
Step 10
This puree pairs well with game, such as duck or venison.
