Main Dishes • Author's
Description
This is how mashed potatoes are prepared at a contemporary American steakhouse.
Ingredients
- Potato 0 lbs
- Butter 20 oz
- Milk 10 fl oz
- Nutmeg 0 oz
- Salt to taste
- Ground Black Pepper to taste
- Barbecue sauce 5 oz
- Beef 5 oz
- Garlic 0 oz
Step-by-Step Guide
Step 1
Make bacon chips. Arrange the sliced bacon on a parchment-lined baking sheet, then cover it with another sheet of parchment, place another baking sheet on top, and weigh it down with a press. This is to ensure the bacon stays flat. Bake at 355°F for 20–25 minutes. A significant amount of fat will render out of the chips, so they should be immediately transferred to a paper towel.
Step 2
Make garlic chips. Take cloves of peeled garlic, remove the core, and slice them into thin petals. Soak for 2.5 hours in milk to reduce the garlic flavor. Dry them and lightly fry in hot oil.
Step 3
Boil the potatoes. Drain the water.
Step 4
Thoroughly mash the potatoes with a potato masher.
Step 5
Melt the butter in a saucepan.
Step 6
Heat the milk.
Step 7
Combine the butter and milk until you achieve a smooth consistency.
Step 8
Pour the milk and cream mixture into the potatoes.
Step 9
Occasionally place the pot with the potatoes on a warm burner and manually whisk it in several batches to gradually dissolve all the lumps.
Step 10
Once there are no lumps left, whip the puree with a silicone spatula — it will incorporate air into the puree, helping to achieve a creamy flavor and smooth consistency.
Step 11
Add barbecue sauce to the pot with the puree and mix well.
Step 12
Then add the garlic and bacon chips. Stir again.
