Mashed Potato Balls

Ingredients

  • Salt to taste
  • Safflower Oil 5 fl oz
  • Breadcrumbs 5 oz
  • Chicken Egg 4 pieces
  • Potato 1⅕ kg

Step-by-Step Guide

Step 1

Peel the potatoes, cut them into large pieces, place them in a pot, add cold water and a teaspoon of salt. The water should cover the potatoes completely. Bring to a boil, then reduce the heat and simmer for 20-30 minutes until the potatoes are soft. Drain the water and immediately mash the potatoes. Beat two eggs and fold them into the mash. Taste and season with salt if needed.

Step 2

Shape the puree into balls. Beat the remaining two eggs in a wide plate, and place breadcrumbs in another plate. Dip the balls first in the egg, then in the breadcrumbs, and fry them in a pan with oil heated to 355°F. Fry in batches until the crust is golden and crispy.

Step 3

Remove excess oil with a paper towel and serve immediately.
