Masala Fried Crab
Ingredients
- Cilantro 2 tablespoons
- Vegetable Oil 3 tablespoons
- Onion 10 oz
- Coriander essential oil 1 tablespoon
- Toasted Cumin Seeds ½ tablespoon
- Red Long Chili Peppers 1 piece
- Green peppercorns 5 pieces
- Ground clove 2 pieces
- Grated Ginger Root 1 tablespoon
- Minced garlic 3 cloves
- Dill 1 teaspoon
- Tomato Puree 5 oz
- Turmeric 1 teaspoon
- Blue Crabs 2 pieces
- Salt to taste
- Rice to taste
Step-by-Step Guide
Step 1
Heat 1 tablespoon of oil in a heavy-bottomed pan over low heat until sizzling. Add 1 tablespoon of chopped onion, coriander seeds, cumin seeds, dried chili, black peppercorns, cloves, garlic, and ginger.
Step 2
Cook, stirring constantly, for 5 minutes until fragrant. Turn off the heat and add dill seeds. Stir well. Transfer to a blender and blend until smooth.
Step 3
Wipe the pan with a paper towel and add the remaining oil. Heat over medium heat. Add the onion. Cook for 6 minutes, stirring, until the onion is golden brown. Add the tomato puree, bring to a boil, and simmer for 5 minutes.
Step 4
Add the turmeric powder and the blended spice paste. Mix well and continue to cook, stirring constantly, until the oil starts to separate and rise to the surface. Add a few drops of water if the paste is too dry or sticking.
Step 5
Place the crabs on top and season with salt. Spoon a small amount of sauce over the crabs. Cover with a lid and cook for 5 minutes. Remove the lid, stir, and continue cooking for 10 minutes, occasionally spooning sauce over the crabs.
Step 6
Garnish with cilantro leaves and serve with flatbreads or rice.
