Masala Bhath (Spicy Rice)
Ingredients
- Basmati rice 10 oz
- Olive Oil 2 tablespoons
- Toasted Cumin Seeds 2 teaspoons
- Mild Chili Spice 1 piece
- Ground Cinnamon 1 teaspoon
- Ground Nutmeg 1 teaspoon
- Grated Ginger Root 1 teaspoon
- Cardamom 2 teaspoons
- Chopped Green Onions 2 tablespoons
- Water 30 fl oz
Step-by-Step Guide
Step 1
Rinse the rice well, soak for 15 minutes, then drain in a colander for 15 minutes.
Step 2
Pour salted water into a pot and bring to a boil. Heat vegetable oil in a medium-sized pot and sauté the cumin seeds and chili. When the cumin seeds start to darken, add cinnamon, ginger, cardamom, and nutmeg. Stir quickly, add the rice, and continue to stir.
Step 3
After 1-2 minutes, when the rice is slightly toasted, pour in boiling water, cover the pot with a lid, and reduce the heat to low.
Step 4
Without lifting the lid or stirring, cook for 15-18 minutes until the rice absorbs all the water. Remove the lid and keep the pot uncovered on low heat for a few minutes.
Step 5
Gently fluff with a fork, adding butter and chopped fresh cilantro or parsley leaves.
