Marinated Veal
Ingredients
- Veal 0 lbs
- Herbs 1 bunch
- Green peppercorns 1 teaspoon
- Garlic 2 cloves
- Malt Vinegar 5 tablespoons
- Salt to taste
- Dijon Mustard 1 teaspoon
- Ground Black Pepper to taste
- Sugar ½ teaspoon
- Scallions 2 stalks
- Cornichons 5 oz
- Pickled capers 2 teaspoons
- Olive Oil 8 tablespoons
- Fresh basil leaves to taste
Step-by-Step Guide
Step 1
Rinse the veal and place it in a pot of water. Add finely chopped herbs and black peppercorns. Bring to a boil, skim off the foam, and simmer on low heat for about 40 minutes. Remove the meat, let it cool, and strain the broth.
Step 2
For the marinade, peel and crush the garlic, then mix it with vinegar, mustard, salt, pepper, and sugar. Peel the onions, trim the greens, and finely chop the white part. Finely chop the cornichons and basil leaves. Add everything to the marinade.
Step 3
Slice the meat thinly, arrange it on a platter, drizzle with the marinade, and let it soak in. Serve well with a baguette and chilled rosé wine.
