Marinated Turkey in White Wine with Citrus Aroma
Ingredients
- Garlic 3 heads
- Ground Black Pepper 1 tablespoon
- Ground Cumin 1 tablespoon
- Dried Rosemary 1 tablespoon
- Salt 2 tablespoons
- Meyer Lemon Juice 2 cups
- Dry White Wine 1 cup
- Concentrated Cranberry Juice 5 fl oz
- Turkey 15 lbs
Step-by-Step Guide
Step 1
Rinse the turkey well and pat it dry. Make several cuts in the body to allow for better marination.
Step 2
In a large bowl, mix the peeled and chopped garlic, black pepper, cumin, oregano, salt, lemon juice, wine, and orange concentrate.
Step 3
Place the turkey in the marinade and mix well. Insert pieces of garlic into the cuts made. Cover and refrigerate overnight, turning occasionally.
Step 4
Preheat the oven to 320°F.
Step 5
Transfer the turkey to a roasting pan and roast until cooked, about 5 hours, basting with juices every 30-40 minutes. If the turkey starts to burn, cover it with foil.
