Step-by-Step Guide

Step 1

First, you need to prepare the marinade. Pour the yogurt into a chosen container and mix it with lemon juice, salt, spices, and seasonings. Ground peppers (red, black, white, and chili), oregano, and curry work well with poultry. The marinade should be thick and rich.

Step 2

After that, take the thawed turkey fillet and make several penetrating cuts in it. The reason is that poultry meat (especially the fillet parts) has a very fibrous structure, and the turkey will absorb the marinade much better when there are openings.

Step 3

If this is not done, the marinade will only penetrate the surface of the meat. Unless, of course, you increase the marinating time two to three times. Once you place the fillet in the marinade, it should be left there for three to four hours. During this time, it is important to turn it over so that the meat marinates evenly on both sides. This way, the turkey will be evenly infused, and there won't be any dry, tasteless spots left when roasting.

Step 4

Next, the turkey should be wrapped in baking foil. It should fit snugly enough to prevent any marinade from leaking out of the pouch. The fillet needs to be baked in the oven at 390°F for 25–30 minutes.

Step 5

In the end, it will turn out to be very tender and delicious, infused and juicy. This dish goes perfectly with mashed potatoes, rice, and buckwheat porridge. Such fillet can also be used to make tasty low-calorie sandwiches, as turkey fillet is extremely low in fat.
