Marinated pork baked with fig

Ingredients

  • Pork Blood 30 oz
  • Fig 4 pieces
  • Meyer Lemon Juice 0 fl oz
  • Rosé Dry Wine 5 fl oz
  • Fig Jam 1 tablespoon
  • Thyme 1 bunch
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Rub the pork with salt and pepper (bone-in pork works best).

Step 2

Strip the leaves from the thyme.

Step 3

Place the pieces of meat in a container, sprinkling thyme on both sides.

Step 4

Mix the lemon juice with the wine, add the fig jam, and stir. Drizzle the mixture over the meat.

Step 5

Refrigerate for at least 6 hours.

Step 6

Slice the figs (fresh figs are essential) into rounds about 4–5 mm thick and place them on the meat.

Step 7

Preheat the oven to 430°F.

Step 8

Place the meat on a baking sheet, put it in the oven for 10–15 minutes, then reduce the temperature to 180–375°F and bake, basting with the marinade, for about 1 hour to 1 hour 20 minutes.
