Marinated Peppers
Ingredients
- Olive Oil 2 tablespoons
- Onion 1 head
- Carrot 1 piece
- Garlic 1 clove
- Red Long Chili Peppers 10 pieces
- Table vinegar 10 fl oz
- Coarse Salt 1½ teaspoons
- Dried Rosemary 1 teaspoon
- Bay leaf 1 piece
Step-by-Step Guide
Step 1
Heat the oil in a large skillet over high heat. Add the onion, carrot, and garlic. Sauté, stirring, for 3 minutes until softened. Add the hot peppers and continue to sauté, stirring, for another 4 minutes. Add the vinegar, salt, oregano, bay leaf, and 480 ml of water; bring to a boil; remove from heat and let cool to room temperature.
Step 2
Transfer to a storage container and keep in the refrigerator for no more than 2 weeks.
