Ingredients
- Orange Bell Peppers 1 piece
- Halloumi Cheese 10 oz
- Onion 1 head
- Thyme 1 teaspoon
- Royal Mushrooms 4 pieces
- Oregano 1 teaspoon
- Rosemary 1 teaspoon
- Fresh Mint 0 oz
- Parsley 0 oz
- Garlic 1 clove
- Olive Oil 0 fl oz
- Lime 2 pieces
- Ground Black Pepper to taste
- Tomatoes 4 pieces
- Ground coriander 0 oz
- Ground ancho chili pepper 1 piece
Step-by-Step Guide
Step 1
Cut the bell pepper and onion into 2.5 cm pieces. Prepare the marinade. Chop the herbs and garlic, then mix with olive oil, the juice of 1 lime, and freshly ground black pepper.
Step 2
Place the cheese, bell pepper, onion, and mushrooms in a large deep bowl, pour the marinade over them, and mix well. Cover and refrigerate for 24 hours.
Step 3
Prepare the salsa. Remove the skin from the tomatoes, cut them in half, and carefully squeeze out the seeds into a plate. Dice the tomatoes into 5 mm cubes and place them on a serving dish. Cut the chili pepper in half, remove the seeds, chop the flesh, and add it to the tomatoes. Stir in the chopped onion, cilantro, and lime juice, then season with salt and pepper. Let it sit in the refrigerator for an hour before serving.
Step 4
Thread the kebab ingredients onto 2 skewers: mushroom, onion, pepper, and cheese cubes, followed by onion, pepper, and cheese again, finishing with a mushroom. Grill over hot coals for 10–15 minutes.
Step 5
Serve with the salsa.
