Marinated Chicken and Onion Skewers with Barbecue Sauce
Ingredients
- Barbecue sauce 1 cup
- Ketchup 2 tablespoons
- Onion 2½ heads
- TABASCO® to taste
- Chicken fillet 4 pieces
- Worcestershire Sauce 2 tablespoons
- Meyer Lemon Juice 2 tablespoons
- Olive Oil 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
- Marinated cherries 0 oz
Step-by-Step Guide
Step 1
In a small bowl, mix together the barbecue sauce, ketchup, chopped 1 head of onion, lemon juice, and a bit of TABASCO. Cover and refrigerate.
Step 2
In a bowl, combine Worcestershire sauce, lemon juice, and olive oil. Cut the chicken breasts into small pieces and place them in the marinade. Mix well, cover with plastic wrap, and let sit for at least 15 minutes (the chicken can marinate for up to 24 hours).
Step 3
Thread pieces of chicken, chunks of coarsely chopped onion, and cherry tomatoes onto metal skewers alternately. Brush the kebabs with olive oil, and season with salt and pepper.
Step 4
Preheat the grill or barbecue. Grill the skewers, turning frequently, for about 10 minutes until the chicken and onion are cooked through and golden brown. Serve with the sauce.
