Ingredients
- Butter 0 oz
- Marbled Beef 65 oz
- Fatty Beef 20 oz
- Onion 20 oz
- Salt to taste
- Ground Black Pepper to taste
- Wheat Flour 5 oz
- Vegetable Oil to taste
Step-by-Step Guide
Step 1
Clean the beef shoulder, chop it finely or pass it through a coarse grinder. Pass half of the onion along with the beef fat through a meat grinder with a fine plate. Dice the other half of the onion and sauté it in butter. Combine everything, add salt and pepper, and mix well until homogeneous. Place in the refrigerator for 30 minutes.
Step 2
Remove the minced meat, beat it again, and shape it into flat oval patties. Dredge the patties in flour. Fry them in vegetable oil in a skillet on both sides and then finish cooking in the oven for 15 minutes at 355°F.
