  • Olive Oil 2 spoons
  • Maple syrup 1 tablespoon
  • Garlic 2 cloves
  • Herbes de Provence ⅓ spoons
  • Salt to taste
  • Ground Black Pepper to taste
  • Scottish Hot Pepper to taste
  • Romaine lettuce 0 oz
  • Leek 0 oz
  • Cherry 0 oz
  • Shelled pumpkin seeds 1 tablespoon
  • Coconut Milk 0 fl oz
  • Paprika to taste

Step-by-Step Guide

Step 1

Crush a couple of garlic cloves and place them in the baking dish. Top with small or large pieces of pumpkin. Drizzle a thin stream of oil mixed with syrup, salt, pepper, and herbs. For a kick, you can add some chili pepper. It elegantly balances the flavors of garlic and maple pumpkin.

Step 2

Bake for 30–40 minutes. The time depends on the thickness of the squash and the variety, so check for tenderness.

Step 3

While the pumpkin is roasting, prepare the leeks. Slice them into rings. Grease a skillet with coconut oil and sauté the leeks with paprika.

Step 4

Season with salt, mix with cherries and seeds, and serve on a plate with roasted pumpkin and a portion of fresh salad.
