Manti with minced meat and potatoes
Ingredients
- Wheat Flour 25 oz
- Chicken Egg 1 piece
- Water 10 fl oz
- Salt 2 tablespoons
- Veal Mince 20 oz
- Onion 20 oz
- Pork Mince 20 oz
- Potato 20 oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
For the dough, pile the flour into a mound (about 5-6 cups), make a well in the center, pour in the egg, add salt (1 teaspoon without a heap), and 1 cup of boiled water plus a little more 'to taste', while gradually mixing the water with the flour using the other hand. Knead until you have a smooth, elastic dough, setting aside excess flour for rolling out the dough. Let the dough rest for 30-40 minutes.
Step 2
Filling: dice the potatoes (or grate them on a coarse grater), finely chop the onion. Mix with the minced meat, add a tablespoon of salt, a cup of water, and pepper, and create a uniform mixture.
Step 3
Roll out the dough and cut it into diamonds. Connect the corners diagonally, then connect the resulting lines and 2 corners together.
Step 4
Place the manti on a steamer rack greased with vegetable oil and steam for 30 minutes.
