Ingredients
- Coarse Cornmeal 15 oz
- Water 0 qt
- Onion 2 heads
- Butter 2 tablespoons
- Farmers cheese 10 oz
Step-by-Step Guide
Step 1
Pre-dry the finely ground cornmeal in the oven.
Step 2
In a cast-iron pot, bring the water to a boil, adding salt. Reduce the heat. Carefully sprinkle in the cornmeal, sifting it in small portions. Stir continuously with a wooden spoon.
Step 3
Cook at a gentle boil for 30 minutes, stirring constantly. Then reduce the heat and let the mămăligă simmer for another 15-20 minutes, until thickened. Stir continuously, ensuring to scrape both the bottom and the sides of the pot.
Step 4
Wet a spoon in water to detach the mămăligă from the sides and let it sit for a couple more minutes on the heat.
Step 5
Shake the pot several times and turn the mămăligă out onto a cutting board or a decorative kitchen towel. Proper mămăligă should retain the shape of the pot. Cut the mămăligă with a thread.
Step 6
Serve with fried onions in butter and grated sheep cheese.
