Ingredients
- Spinach 20 oz
- Cottage cheese 10 oz
- Onion 1 piece
- Chicken Egg 1 piece
- Grated Pecorino Pepato Cheese 2 tablespoons
- Wheat Flour 2 tablespoons
- Olive Oil 4 tablespoons
- Sage to taste
- Salt to taste
- White Pepper (whole) to taste
Step-by-Step Guide
Step 1
Thaw the spinach. Chop it. Finely chop the onion and sauté it in oil. Add the spinach when the onion turns golden. Cook for 3 minutes. Let it cool.
Step 2
Mix the cottage cheese (or ricotta) with the parmesan, boiled eggs, season with pepper, and add the flour. Incorporate the cooled spinach. Mix and knead. Shape the gnocchi into oval forms.
Step 3
In boiling water, with a drop of oil and a pinch of salt, place the gnocchi and cook until they float.
Step 4
Sauté the herbs in oil over low heat. Place the gnocchi on a plate and drizzle with oil. Sprinkle with parmesan.
