Prepare all the ingredients. Preheat the oven to 355°F.

Clean the mackerel and gut it.
Step 3
Place the whole mackerel on foil, season with salt and pepper.

Chop the parsley, dill, basil, and cilantro.

Spread the chopped herbs over the mackerel.

Squeeze the lemon and add the juice along with the peel to the fish.

Carefully wrap the mackerel in foil.
