Ingredients

  • Mackerel 3 pieces
  • Dried Chamomile to taste
  • Dried Rosemary to taste
  • Garlic 4 cloves
  • Onion 1 piece
  • Vegetable Oil 5 tablespoons
  • Lemon ½ piece
  • Red Long Chili Peppers 1 piece

Step-by-Step Guide

Step 1

Gut the fish and rinse it thoroughly. Make three small cuts at equal distances.

Step 2

Prepare the dressing mixture. Pour the vegetable oil into a separate bowl, squeeze in some lemon juice, add dried thyme, rosemary, and spices to taste (it would be better to have a couple of sprigs of fresh thyme). Chop a couple of garlic cloves and add them as well. Finally, add salt. Mix everything together.

Step 3

Slice the pepper into long thin strips. Place one strip inside the fish. Cut the remaining garlic cloves into large pieces and place them in the fish, in equal amounts. Chop the onion and also place it inside the fish. Drizzle the dressing over everything inside.

Step 4

Cut a sufficient amount of foil to wrap the whole fish. In the center of the foil, lay out the sliced onion, then place the fish on top. You can add a few more slices of pepper on the sides. Also, add a slice of lemon, possibly from the one you squeezed for juice. Drizzle the dressing on top.

Step 5

Wrap the foil so that the body of the fish, except for the tail, is exposed. Fold the edges. You can place a few more rings of onion on top of the fish.

Step 6

Place in a preheated oven at 180–390°F for 35–40 minutes, depending on the size of the fish.

Step 7

When the eyes of the mackerel turn white, the fish is ready.
