Lobio with Nuts and Mint

Ingredients

  • Beans 20 oz
  • Onion 3 heads
  • Malt Vinegar ¼ cup
  • Vegetable Oil ¼ cup
  • Walnuts 0 oz
  • Dried Rosemary 1 tablespoon
  • Savory 2 sprigs
  • Fresh basil leaves 1½ tablespoons
  • Ground Cinnamon ½ teaspoon
  • Khmeli-suneli ½ teaspoon
  • Garlic 4 cloves
  • Red Long Chili Peppers 1 teaspoon

Step-by-Step Guide

Step 1

Soak the beans in cold water for 6–24 hours, changing the water 1–2 times.

Step 2

Rinse the beans, cover with cold water (the water should slightly cover the beans), and boil over moderate heat with a lid until the beans are cooked. If all the water evaporates before the beans are ready, add boiling water (not cold water!).

Step 3

Crush the nuts finely with garlic, red pepper, and salt. Dilute with wine vinegar (boil the vinegar for 2–3 minutes with basil beforehand). Add the remaining spices.

Step 4

Without letting the cooked beans cool, place them in a dish with the sautéed onions, salt, and sauté for 3–4 minutes (or simply let the beans absorb the heated oil).

Step 5

Transfer the beans with onions to an enamel or porcelain dish and mix with the nut mixture.

Step 6

You can also sprinkle with finely chopped herbs.
