Light Pilaf with Tomato Paste

Ingredients

  • Olive Oil 4 tablespoons
  • Onion 2 heads
  • Garlic 1 clove
  • Carrot 1 piece
  • Meat 10 oz
  • Rice ½ cup
  • Salt to taste
  • Ground Black Pepper to taste
  • Pilaf Spices a pinch
  • Green peppercorns 3 pieces
  • Passata Tomato Sauce 1 tablespoon

Step-by-Step Guide

Step 1

Wash the meat, pat dry, cut into small pieces, season with salt and pepper.

Step 2

Peel, wash, and slice the onion into half rings.

Step 3

Peel the large carrot, wash it, and grate it on a coarse grater.

Step 4

Heat a frying pan, pour in half of the olive oil, and heat well. Add half of the prepared onion, and fry until golden, about 5–7 minutes.

Step 5

Add the prepared meat to the pan, and cook until browned, about 10 minutes.

Step 6

Add half of the grated carrot, sauté for 3–5 minutes. Cover with a lid and let it rest.

Step 7

Cook the rice in salted water until half cooked. Drain in a colander, rinse with cold water, and let it drain.

Step 8

Meanwhile, in the remaining olive oil, sauté the onion with the carrot. Add the tomato paste.

Step 9

Add the rice to the vegetables, along with the pilaf seasoning, and mix. Place the head of garlic and black peppercorns in the center. Pour a little water into the bottom of the pan. Cover with a lid and simmer for 5 minutes.

Step 10

Add the cooked meat to the rice, and sauté with the lid off for 3–5 minutes.
