Ingredients
- Lentils 5 oz
- Coconut Milk 5 fl oz
- Water 25 fl oz
- Tomatoes 5 oz
- Onion 5 oz
- Garlic 0 oz
- Ginger Root 0 oz
- Tomato Paste 5 oz
- Chili Pepper 0 oz
- Cilantro 0 oz
- Green Onion 0 oz
- Short-grain rice 25 oz
- Ground Cumin 0 oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Soak the lentils for 2 hours.
Step 2
Sauté the onion, ginger, garlic, and chili pepper until golden brown. Add the tomato paste and spices. Cook on low heat for 5 minutes. Transfer to a pot and add the rinsed lentils.
Step 3
Add water, cover the pot with a lid, and simmer on low heat for 1 to 1.5 hours.
Step 4
Pour in the coconut milk and simmer until slightly thickened. At the end, add herbs and spices to taste.
Step 5
Serve the stew with boiled rice, garnished with cilantro leaves.
