Description

Nutritionists consider lentils to be one of the healthiest foods on the planet: they contain a huge amount (up to 40%) of plant-based protein that is easily digestible. When animal protein is not an option during fasting, lentils become our saving grace. Moreover, behind these small seeds lies a great biblical story: remember how Esau traded his birthright for a bowl of lentil stew? That stew was made from red lentils, but we are preparing patties with green lentils: they hold together better, look more meaty, and closely mimic the taste of meat when combined in the mix with turmeric, cumin, and smoked paprika.

Ingredients

  • Lentils 20 oz
  • Onion 1 head
  • Carrot 1 piece
  • Garlic 1 clove
  • Dill 0 oz
  • Ground Cumin to taste
  • Turmeric to taste
  • Smoked salt to taste
  • Salt to taste
  • Wheat Flour 5 oz
  • Vegetable Oil 5 fl oz

Step-by-Step Guide

Step 1

Add the lentils to boiling water and cook for 15–20 minutes until tender.

Step 2

Dice the onion and carrot into small cubes.

Step 3

In a skillet, heat vegetable oil and sauté the carrot over low heat for 3–4 minutes.

Step 4

Add the onion to the pan and sauté until the vegetables are soft.

Step 5

Chop the garlic and dill.

Step 6

Drain the water from the cooked lentils and pass the lentils through a meat grinder.

Step 7

Add dill, garlic, cumin, sautéed onions with carrots to the lentils, then add paprika or turmeric, and season with salt to taste.

Step 8

Dampen your hands with cold water, shape small patties from the lentil mixture, and coat them in flour.

Step 9

In a clean skillet, heat the oil and fry the patties on both sides until golden brown.
