  • Leek 12 pieces
  • Salt a pinch
  • Olive Oil 3 tablespoons
  • Champagne Vinegar 1 tablespoon
  • Capers 1 tablespoon
  • Anchovy fillet 3 pieces

Step-by-Step Guide

Step 1

Wash the leeks, remove the root and the outer green leaves. Bring a large pot of salted water to a boil, add the leeks, and cook for 15 minutes until they are soft.

Step 2

Meanwhile, dissolve the salt in the vinegar, then add the oil and whisk well with a fork until all the ingredients are combined. Stir in the finely chopped capers and the crumbled anchovies.

Step 3

Drain the water from the leeks. Place them on a serving dish and drizzle with the sauce. Serve warm.
